Aval Payasam

A sweet dish for ...

Aval - Poha(Hindi) - Beaten Rice/Rice Flakes is used in various preparations ranging from snacks to sweets. Almost anything that can be made with rice may be made with Aval. It is relatively light and easy to digest. So, these preparations are often made when we fast.

Aval payasam


Aval/Poha ½ cup

Ghee 4 Tbsp

Milk ½ litre

Jaggery ¼ cup

Sugar ¼ cup; or to taste

Cardamom Pd 3, powdered

Dry Ginger Pd ¼ tsp

Cashew nuts 10

Raisins 10


Heat 2 Tbsp ghee and fry aval/poha in it until it changes color. Powder coarsely.

Heat remaining ghee and roast cashews and raisins. Keep aside.

Bring milk to a boil and simmer until it becomes 2 cups.

Cook powdered aval/poha with just enough water. When nearly done, add thickened milk and simmer for 3 minutes. Add jaggery and sugar to taste. Simmer for 4 minutes.

Add Cardamom and Dry ginger pd. Mix well and simmer.

Add cashew nuts and raisins fried in ghee.

Serve hot.
