Carrot Rice

The carrot gets its characteristic and bright orange colour from Beta Carotene, which is metabolised into Vitamin A.The Beta Carotene present in carrots prevent cell degeneration. Carrot juice has anti-carcinogen properties. It is believed to have cancer curing properties. Carrots are also rich in dietary fibre, antioxidants, and minerals. Lack of Vitamin A can cause poor vision, including night vision, and vision can be restored by adding Vitamin A back into the diet. Carrots are good for the skin. Wikipedia / India Paretnting




Massive overconsumption of carrots can cause carotenosis, a benign condition in which the skin turns orange.

"Alavukku meerinal, amruthamum visham" meaning... If you exceed the allowable dosage, even necter becomes poisonous.

Carrot Rice



Ingredients:

Basmati Rice 1 cup

Carrots, grated 1 cup

Grated Coconut ¼ cup

Chili Powder 1½ tsp

Butter 1 Tbsp

Salt 1¼ tsp

Seasoning: (optional)

Oil 1 Tbsp

Cumin seeds ½ tsp

Curry leaves 1 sprig


Method:

In a large microwavable container, take rice, carrots, coconut, chili powder, salt, butter and water. Microwave on high for 12 to 15 minutes.

OR

In a pressure pan, add all the ingredients and cook for 3 whistles.


Seasoning:

Heat oil in a pan and add cumin seeds and curry leaves. Add to cooked rice and mix well.
