
Carrot Rice

Ingredients:
Basmati Rice 1 cup
Carrots, grated 1 cup
Grated Coconut ¼ cup
Chili Powder 1½ tsp
Butter 1 Tbsp
Salt 1¼ tsp
Seasoning: (optional)
Oil 1 Tbsp
Cumin seeds ½ tsp
Curry leaves 1 sprig
Method:
In a large microwavable container, take rice, carrots, coconut, chili powder, salt, butter and water. Microwave on high for 12 to 15 minutes.
OR
In a pressure pan, add all the ingredients and cook for 3 whistles.
Seasoning:
Heat oil in a pan and add cumin seeds and curry leaves. Add to cooked rice and mix well.
