The best accompaniment to most South Indian staples is the Sambhar. Basically, there are 2 varieties.
1. Everyday/Basic Sambhar.
2. Arachu Vitta Sambhar for special occasions.
Sambhar
Ingredients:
Tur Dal ¼ cup
Asafetida ¼ tsp
Red Chili 1
Turmeric Powder ¼ tsp
Water 1 cup
Onion 1
Potatoes 1
Tomato 2
Green Chili 3
Salt to taste
Tamarind Paste 2 Tbsp
Coriander leaves 2 Tbsp
Seasoning:
Oil 2 Tbsp
Mustard seeds ½ tsp
Curry leaves 1 sprig
Method:
Pressure cook lentils in water with red chili, asafetida and turmeric powder. After the first whistle, simmer for 5 minutes.
After the pressure subsides, open cooker and add vegetables, chili and salt to taste. Pressure cook for 1 whistle.
Wait for the pressure to go down before opening the cooker.
Open cooker and add seasoning, tamarind paste and coriander leaves.
Serve hot with Idli, Dosai, Ven Pongal.
