Rawa Dhokla
Ingredients:
Rawa/Sooji/Semolina 1 cup
Curds ¼ cup
Water 1 cup
Salt 1¼ tsp
Turmeric Pd ¼ tsp
Green Chilies 1 tsp
Fruit Salt (Eno) 1tsp
Oil 1tsp
Chili Flakes ½ tsp
Seasoning:
Oil 1 Tbsp
Mustard 1 tsp
White Sesame seeds 1tsp
Curry Leaves 1 sprig
Garnish:
Coriander leaves 2 Tbsp
Coconut, grated 2 Tbsp (optional)
Method:
Mix sooji (rawa/semolina) with water, beaten curds, salt, chili paste and turmeric pd.
Soak for 20 – 30 minutes.
Grease a shallow dish (8” in diameter) with oil.
Boil water in a steamer.
When it starts steaming, place prepared mould in it - to warm the mould.
Mix Fruit Salt (Eno) and oil into rawa (sooji/semolina) mixture.
Immediately pour into prepared mould. Sprinkle chilli flakes.
Close steamer and cook for 15 minutes.
Sprinkle water liberally. Cool and cut into pieces.
Sprinkle chopped coriander and coconut.
Heat oil in a pan and add mustard seeds, sesame seeds and curry leaves.
Pour 1 Tbsp water into seasoning. Take off heat and spoon over prepared dhokla.
Mix Green chutney with 2 Tbsp beaten curds.
Serve hot Dhokla with Dahi green chutney.
