Vegetable Cutlets

Ingredients:
Potatoes 2
Vegetables ½ cup
Green Chili 2-3
Ginger ¼ tsp
Turmeric Pd ¼ tsp
Salt to taste
Bread crumbs ½ cup (approx)
Oil for shallow frying
Maida Paste:
All purpose flour ¼ cup
Salt ¼ tsp
Pepper ¼ tsp

Method:
Boil potatoes and mash while hot.
Chop vegetables finely. Mince the green chilies. Grate ginger.
Heat 2 tsp oil in a pan and stir fry vegetables, ginger, turmeric powder and chilies. Add salt to taste. When nearly done, add this to the potatoes and mix well. Shape into cutlets.
Dip in maida paste and roll over breadcrumbs.
Shallow fry in a pan with oil.
Serve hot with tomato-chili sauce.
