"Vendakkai sappitta kanakku varum" - if you eat ladies finger mathematics becomes easy.
Bhindi(Hindi) / Vendakkai(Tamil) / Lady's Finger
Bhindi Fry

Ingredients:
300 grams Ladies Finger, cut into 1” pieces
3 Tbsp Oil
1 Onion, sliced
½ tsp Dhania Pd
½ tsp Garam Masala Pd
½ tsp Turmeric Pd
½ tsp Chili Pd
½ tsp Aamchur / lemon juice
3 Green Chilies, slit
Salt to taste
Coriander leaves to garnish
Method:
Mix ladies finger with 1 tsp oil, ¼ tsp salt and microwave for 3 minutes.
In another bowl, take the remaining oil and microwave for 2 minutes. Mix in turmeric, chili and garam masala and onion and microwave for 3 minutes.
Add fried bhindi and cook in microwave for 4 – 5 minutes.
Sprinkle aamchur and add salt to taste. Mix in chilies and cook further until done (4-5 minutes). Keep aside for 5 minutes.
Garnish with coriander leaves and serve.
Note: I do not use onions, so I have avoided it. At step 2, I mixed it all in with the ladies fingers.
***Packed Lunch:
Spread 1 tsp tomato sauce on a chapathi. Place Bhindi Fry on it and roll up tightly.
