A comfort food to spring our taste buds alive with minimum fuss. This is one ready reckoner when in a hurry.
Potato Puli Kuzhambu
Ingredients:
Onion 1, dice
Potato 1
Garlic 6 flakes
Tomato 1
Sambhar powder 4 tsp
Tamarind paste 1½ Tbsp
Salt to taste
Oil 3 Tbsp
Mustard ½ tsp
Urad dal ½ tsp
Asafetida ¼ tsp
Curry leaves 2 sprigs
Fenugreek a pinch
Method:
Peel and dice potatoes. Drop in water to avoid discoloration.
Heat oil. Splutter mustard. Add urad dal and after it changes color, add asafetida, curry leaves and fenugreek.
Add onions and sauté. Add garlic and stir fry for 2 minutes.
Add tomatoes and sambhar powder.
Sauté well and add water. Cook till potatoes are half cooked.
Add tamarind and cook potatoes are cooked and gravy is thick.
Serve hot with Rice/Idli.
Note: Other vegetables that may be made similarly are - Drumsticks, Brinjals.
A combination of vegetables may also be used.
