Spinach and Feta Roti
Roti - 4
Butter/Olive oil - 2 tsp
Spinach - 2 cups, blanch, drain well and chop
Mint - 2 Tbsp
Feta Cheese - 4 Tbsp
Salt and Pepper to taste
Grated Cheese - 4 Tbsp
Mix the spinach, mint, crumbled feta, salt and pepper in a bowl.
Heat a tava, and warm the rotis with some butter/olive oil.
Sprinkle some cheese on the Roti, followed by the filling and then more cheese and cover with the 2nd Roti.
Cook on a hot tava, until golden brown on both sides and the cheese is melted.
