Cheesy Semolina Fingers

Absolute melt in the mouth starters/snacks. I first tasted this in Coimbatore. Mummy learnt this recipe from her friend Nirmala. There are many versions of these goodies.

Cheesy Semolina Fingers
Ingredients:
Butter – 2 tsp
Onion – 1
Green Chillies – 4, minced
Semolina – 1 cup
Milk – 1 cup
Water – 1 cup
Salt – 1 tsp
Ginger – 1 tsp, grated finely
Cumin Powder – 1 tsp
Coriander Leaves – 4 tsp, chopped fine
Cheese – 2 cubes, grated
Bread Crumbs – 4 tsp

Method:
Heat butter and sauté the onions and chillies. Add the semolina and then add the milk and water. Cook until thick. Remove and cool.
Refrigerate for ½ hour to firm up.
Add the remaining ingredients and mix well to get a smooth mixture.
Flatten on a greased plate (1”thick).
Cut into fingers and dust with plain flour.
Deep fry in hot oil.
Serve with Mint Chutney.

Off to Tickling Palates.
