Pineapple Katli

Happy Pongal.
A sweet treat to celebrate this special day. Inspiration - Mrs.Tarla Dalal!


Ingredients:

1/2 cup Pineapple puree*
1/4 cup candied Pineapple
1/2 cup Sugar
3/4 cup Cashew nuts
1 tsp Ghee

Method
Powder the cashew nuts adding a little sugar.
Take the pineapple puree and remaining sugar in a pan and cook on a very slow flame, stirring continuously, till the sugar has dissolved. Cook over a low flame to 1 string consistency.


Add cashew powder, and continue cooking till the mixture leaves the sides of the pan. Approximately 7 to 9 minutes. Mix in the chopped candied fruit.
Pour the mixture onto a greased surface and cut into 1" squares.

 



















To purée pineapple - cook 1/2 cup finely chopped pineapple with 3 tablespoons of water for 5 minutes and then blend in a food processor.
