Rava-Semiya Dosai


Instant, healthy and can be made from scratch in a jiffy. What more? My friend Lakshmi made these for me one evening. Now it features regularly in our home. She makes Idli and Dosa from this combo. I prefer the Dosa.

Ingredients:
Rava (Semolina) - 1/2 cup
Semiya (Vermicelli) - 1 cup
Ghee - 1 Tbsp
Salt to taste
Curds - 4 Tbsp
Turmerric Powder - 1/4 tsp
Green Chilli - 3
Ginger - 1/4"
Mixed Veg - 1/2 cup
Water
Oil

Method:
Heat ghee in a pan. Roast the vermicelli with ghee. Transfer to a plate.
In the same pan, dry roast the rava. Transfer to a plate.
Grind chillies with ginger, or mince them.
Mix rava, semolina, chilli-ginger paste, salt and curds with little water. Keep aside.
Chop the vegetables very finely. I use baby corn, carrots and capsicum.
Heat a little oil and saute the vegetables with little salt and turmerric powder.
Add it to the rava mixture. Mix well adding water as needed to get a dropping consistency.
Heat a tava. Spread a ladleful of batter to make a slightly thick Dosa.
Drizzle some oil along the edges. Allow to cook and then flip over to cook on the other side as well.
