Ingredients:
Onion - 2
Potato - 1
Gr. Chillies - 3 or 4
Oil - 1 tsp
Jeera - 1/ tsp
Coconut Milk - 3 cups, thin
Coconut Milk - 1 cup, thick
Salt to taste
Lemon juice to taste (1 Tbsp)
Method:
Grate 1 full coconut. Extract thick coconut milk first and keep aside.
Add water and extract thin coconut milk.
Chop the onions and potatoes into thin juliennes.
Heat oil and splutter jeera.
Immediately, add the chopped onions, potatoes and slit gr chillies. Saute for 1 minute.
Add the thin coconut milk and simmer until vegetables are half cooked.
Add salt to taste and simmer further until gravy thickens and the vegetables have softened.
Add thick coconut milk and take it off heat.
Add lemon juice to taste.
Serve hot with Idli / Idiappam.
Variation: If using moong dal along with coconut milk - use lesser quantity of Coconut.
- Pressure cook 2 Tbsp moong dal in 1 cup water. Mash and make a soup.
- Add it to the sauteed vegetables along with 1 cup of thin coconut milk.
- Add 1/2 cup thick coconut milk at the end.
