Pannacotta and Florentines --- Daring Bakers, Feb 2011

Pannacotta topped with crushed Florentines
The February 2011 Daring Bakers’ challenge was hosted by Mallory from A Sofa in the Kitchen. She chose to challenge everyone to make Panna Cotta from a Giada De Laurentiis recipe and Nestle Florentine Cookies. Thank you Mallory for a fabulous and simple challenge. My family enjoyed it!!!
The simplest of recipes tests you the most. The Pannacotta got done in a jiffy; but the florentines were another story.
The Pannacotta
Milk - 250 ml
Gelatin - 1 Tbsp
Fresh Cream - 720 ml
Honey - 80 ml
Sugar - 1 Tbsp

1. Sprinkle the gelatin over the milk, in a thin layer. Set aside for 10 minutes.
2. Dissolve gelatin over a very slow flame, stirring once or twice.
3. Add in the remaining ingredients and stir to dissolve the sugar.
4. Cool and set in glasses.

Butter - 75 grams
Oats - 80 grams
Sugar - 115 grams
Flour - 45 grams
Golden Syrup - 30 ml
Milk - 30 ml
Vanilla - 1/2 tsp
Salt - 1 pinch

1. Pre-heat oven to 190 degrees Centigrade. Line your baking tray with butter paper.
2. Melt the butter.
3. Stir in the other ingredients. Mix well.
4. Drop teaspoonfulls, 2" apart. Bake for 6 to 8 minutes.
5. Cool in tin completely. Peel off the butter paper.

Serve the Pannacotta with the Florentines.

OMG those cookies are stunning they are so thin and crisp superb work on this challenge. And the panna cotta would be great with them. Glad to hear that your son is in love with this challenge.
