Vengaya Kose

Another simple and easy side dish for Idli, Dosa and Uthappam. Saunf is a commonly used spice in Chettinad.

Ingredients:
Onion - 3
Potato - 2
Tomato (preferably country type) - 2, chopped
Oil - 3 Tbsp
Saunf - 1/4 tsp
Cinnamon - 1 small piece
Salt to taste

Masala Paste:
Dry Red Chillies - 5
Saunf - 1 tsp
Daliya (Pottukadalai) - 1 Tbsp
Cinnamon - 1 stick
Khus Khus - 1 Tbsp
Cashew nuts - 4
Coconut - 1/2 cup

Method:
Slice the onions and potatoes into thin strips.
Grind all the masala ingredients together to a smooth paste with little water.
Heat oil and add the onions. Saute until onions turn pink. Then add the potatoes.
Saute for 2 minutes. Add the tomatoes, salt and masala paste.
Stir cook over a medium flame until well blended.
Add  water and simmer cook until the gravy thickens.





















Serve hot with Idli / Dosa.
