Vermicelli Delight - GREEN

Vermicelli delights are my son's favourite packed lunch. Mummy made a Green version for him one day. She is very innovative and loves to prepare new dishes. Her enthusiasm amazes me.
Corriander Leaves have a lot more antioxidants than the seeds and Wiki mentions that corriander leaves have been documented as a traditional medicine for Diabetics!
For me, if something green goes into my son's diet I'm a happy mom. More so now after reading about the benefits of Corriander. Sri Valli's call for a week long (do-able for me) marathon has brought out some planning skills. Thanks Valli, otherwise this would be beyond me.

Vermicelli - 1.5 cups
Onion - 1 (optional)
Capsicum - 1
Carrots - 2
Turmerric Pd - 1/4 tsp
Salt to taste
Lemon Juice

Masala Paste
Corriander Leaves
Green Chillies
Garam Masala

Boil water. Add 1 tsp salt and 1 tsp oil. Now, add in the vermicelli and cook for just 1 minute.
Switch off gas and keep covered for 3 minutes. Drain and spread on a plate. Keep aside.
Cut vegetables into thin strips (Juliennes). Microwave/Steam julienned carrots on high for a minute.
Grind paste ingredients.
Heat oil in a non-stick pan and saute onions. Add the paste and turmerric powder. Saute.
Add vegetables, corriander and salt. Cook for 2 minutes until masala is absorbed in. Add vermicelli and mix well. Mix in lemon juice to taste. Serve with Tomato Ketchup.

Packed and set to go!
