Beetroot Sambhar

Beetroot is my favourite vegetable. There are quite a few dishes that we make with this vegetable. From starter to dessert, this is one versatile vegetable. Sambhar - to go with Idli and Dosa, is a simple and delicious one.

Tur Dal - 1/2 cup
Turmeric Powder - 1/4 tsp
Castor Oil - 1/4 tsp
Dry Red Chili - 1, broken into two

Beetroot - 1
Onion - 1
Tomato - 1, large
Green chillies - 4, slit
Tamarind Extract - 2 Tbsp (approx)
Salt to taste
Oil - 1 tsp
Mustard - 1/4 tsp
Urad dal - 1/2 tsp
Curry Leaves - 1 sprig
Coriander Leaves, chopped.

Pressure cook Tur Dal with Turmeric powder, Castor oil and Red Chili for 3 whistles.
Peel and chop the beetroot and onions. Chop the tomatoes.
Open cooker after pressure drops and add in the vegetables and chillies.
Pressure cook for 1 whistle and 2 minutes. Open after the pressure has dropped completely.
Heat oil in a seasoning pan and splutter mustard and urad. Add curry leaves and chopped coriander. Add to the sambhar and bring to a boil. Add tamarind extract and salt to taste. Simmer for 5 minutes.
Serve hot, garnished with coriander leaves.

I used to make beetroot kuttu, Never got idea to make sambar with this veggie.. looks colorful..will try it soon.

delicious sambar..once saw this recipe in telugu maa tv...but a bit different way

beetroot is one of my most fav veg,

I am also preparing so many varieties
even, pulao, veg biriyani also i will add the beetroot.
