Carrot Halwa - Gajrela


Carrot Halwa / Gajar ka Halwa is the favourite Indian Sweet. The Punjabi way is very delicious  - cooking in milk and the addition of Khoa. This dessert is a must have for celebrations at home. So also, we made this delicacy to welcome our newest and special member into the family.

Ingredients:
Carrots, grated - 1 cup
Milk - 3/4 cup
Sugar - 1/2 cup (to taste)
Khoa (mawa) - 1/4 cup
Ghee - 1/4 cup
Elaichi Powder (Cardamom) - 1/4 tsp
Dry Fruits - 2 Tbsp (Pista, Badham, Cashew)

Method:
Take a heavy based (stainless steel) pan / kadai.
Combine milk and carrots and simmer cook until carrots are soft and mushy.
Add sugar and stir cook until sugar dissolves. Add grated khoa and mix well.
Stir cook till it turns almost dry.
Add in spoonfuls of ghe, and continue to simmer till it leaves the sides of the pan.
Now, add the nuts and cardamom powder. Mix well.
Garnish with sliced pistachios.
