This soup is simple to make and creamy too. The addition of Channa Dal makes it healthy and light. It is colorful and very tasty.
Ingredients:
Butter / Olive Oil - 2 tsp
Onion - 1, chopped
Carrots - 2, chopped
Beetroot - 1 (small), chopped
Tomato - 3, chopped
Cabbage - 1/4 cup (2 leaves)
Beans - 10 nos, chopped
Channa Dal - 2 Tbsp
Salt & Pepper
Water
Garnish:
Boiled Corn - 2 Tbsp
Boiled Peas - 2 Tbsp
Grated Cheese - 2 Tbsp
Method:
Heat butter / oil in a pressure cooker.
Add in the chopped vegetables and saute on high heat for 2 minutes. Add the dal and just enough water.
Close cooker and pressure cook for 3 whistles.
Open after pressure subsides and puree the vegetables.
Strain and add water to required consistency and reheat with salt and pepper to taste.
Serve garnished with boiled corn, peas and cheese; along with Cheesy Bites.
