Beetroot Masala - Chettinad Style

Another temptation - Beetroot Masala!
It is hot and sweet. Perfect!!!
Makes up for comfort food with nutrition (of course). It is a delightful side dish @ lunchtime. Teams up well with Rice and Rasam / Sambhar. Yummy with Curd Rice!


Ingredients:
Beetroot - 1, large
Onion - 1, small (optional)
Tomato - 1, large
Oil - 2 Tbsp
Mustard Seeds - 1/4 tsp
Urad Dal - 1/4 tsp
Saunf - 1/4 tsp
Curry leaves - 1 sprig
Channa Dal - 1 Tbsp
Sambhar Powder - 1-2 tsp
Salt to taste

Method:
Soak Channa Dal in water.
Peel and chop beetroot into small cubes.
Chop onions and tomatoes.
Heat oil in a pan and splutter mustard seeds. Add saunf, urad dal and curry leaves.
Add onions and saute till .it turns pink. Add tomato and sambhar powder. Saute till tomatoes are mushy.
Add beetroot and mix well. Sprinkle salt and a little water. Cook covered until soft.
Open cover and stir cook over a high flame until almost dry.
Serve Hot.

Note:
You can add carrots and potato along with beetroot.
