Beetroot is one of my favourite vegetables. This simple 'Poriyal' is a simple, delicious and healthy side dish to be served at lunch time.
Ingredients:
Beetroot - 2, large
Onion - 1, small (optional)
Green Chillies - 3 or 4
Oil - 2 tsp
Mustard - 1/4 tsp
Urad Dal - 1/4 tsp
Curry Leaves - 1 sprig, chopped
Coconut - 2 Tbsp
Method:
Wash and peel the skin of beetroot. Chop fine. Chop onions also similarly.
Heat oil in a shallow pan. Splutter mustard seeds, urad dal and curry leaves.
Add onion and slit green chillies. Saute until it changes colour and then add beetroot.
Saute over high heat for a minute. Lower flame and sprinkle water. Mix and cook covered until half done. Then, mix in salt and cook covered for 3 minutes (until done).
Sprinkle grated coconut and take off heat.
Serve Hot.
We like to have it mixed with rice and ghee.
