Vegetable Stuffed Idli

My favourite.
Today the lunch-box had to be something easy and simple. So, I made a masala filling with corn and capsicum; and, stuffed it inside the idli.

For the stuffing
Corn - 1/2 cup, steamed or microwaved for 2 minutes
Capsicum - 1/4 cup, chopped
Onion - 1/4 cup, chopped
Tomato - 1 small, chopped
Oil - 1 Tbsp
Chilli Powder - 1/2 tsp
Dhaniya Powder - 1/4 tsp
Salt to taste
Corriander Leaves

Heat oil and add onions and saute until pink. Then add the capsicum and corn.
Stir fry on a high flame for 1 minute.
Next add the tomatoes, masala powders and salt to taste. Simmer covered for 3 minutes.
Add chopped corriander leaves and take off heat.

Get an Idli steamer ready.
Spoon in a Tablespoonful of batter into each cavity.
Spread it with about a tablespoon full of masala over it gently.
Top the masala (to cover thoroughly) with some more batter.
Steam for 5 to 7 minutes until well cooked.

Turn out and serve hot with Coconut Chutney.


While packing it for lunch, smear some ghee or gingelly oil on the top. Cool and then pack into the lunch box.


Add some mashed potatoes into the masala for a lovely Sandwich.
This also makes a wonderful stuffing for Chapathi.
