Godhumai Dosai - "Lacy" Wheat Pancakes/Dosa
Godhumai Dosai - Wheat Flour Dosa.
There are two ways to make the Dosa - Reg / like a Rava Dosa (Lacy pancake). The regular Dosa, sometimes does not turn out well. I love this 'lacy' Dosa. It was a regular for our "Santoshi Maa Vrat" dinner - using water. Serve with Coconut (using Red chillies) Chutney. The batter has to be used within a couple of hours.
Wheat Flour - 1 cup
Rice Flour or Rava - 4 Tbsp
Onion - 1, chopped very fine (optional)
Green Chillies - 2 to 3, chopped fine
Ginger - 1/4 tsp, grated / ground
Jeera - 1/4 tsp, crushed
Corriander Leaves - 1 Tbsp, chopped fine
Curry Leaves - 1 sprig, chop finely
Salt to taste
Buttermilk or Water - 1 to 2 cups (approx)
Mix both the flours with onion, chillies, ginger, jeera, corriander, curry leaves and salt in a large bowl. Whisk in enough water to make a watery batter (running consistency) without any lumps.
Heat a tava. Smear oil on the tava. Pour in the batter onto hot tava in spurts from well above the tava to form a lacy pancake (Dosa) from outside to inside.
Spoon oil along the edges and some over the dosa as well.
Flip over once the base of the dosa is brown. Cook until crisp on both sides.
Serve hot with a spicy Coconut Chutney.
Similarly you can make Ragi Dosa.
Add finely chopped roasted cashewnuts into the batter.
