Muffin Monday: Ricotta & Basil Muffins

This week it is Savoury Muffins @ Muffin Monday. Never having tasted a savoury muffin, it was quite difficult to imagine. My son refused to at first. After the first bite, he topped it with cream-cheese and enjoyed it. It has grown on us now. Waiting to see the variations other Muffin Monday bloggers are coming up with!

Ricotta and Basil Muffin
2 cups all purpose flour
1 tbsp baking powder
2 tbsp dried basil
1 tsp salt
1 cup Ricotta cheese
1 cup milk
1 large egg
3 tbsp olive oil
1 tbsp sunflower oil

Preheat the oven to 375F
In a large bowl, mix flour, baking powder, dried basil and salt, set aside.
In another bowl, combine the egg, milk, olive oil, sunflower oil and Ricotta cheese and whisk to blend.
Make a well in the center of the dry ingredients and pour in the ricotta mixture.
Stir with a fork just to combine.
Spoon the muffins and bake for 20 to 25 minutes.

Love the idea of slapping on some cream cheese! I'm gonna have to give it a try this morning with my leftover muffins :) Happy Muffin Monday!
Cream Cheese - perfect! One of my favourite muffin toppings, but hadn't thought to try it on this one. Your son is a smartie! Nice to bake with you.
