Muffin Monday | Strawberry Yogurt Muffins

My first attempt at baking with fresh strawberries. Delicious! I halved the recipe and made 6 muffins.

Strawberry Yogurt Muffins
(Source: Taste Of Home)  Makes 6 muffins
¾ cup + 2 Tbsp All-purpose Flour
¼ cup + 2 Tbsp Sugar
½ tsp Baking Soda
1 pinch ground Nutmeg
1 Egg, lightly beaten
¼ cup Plain Yogurt
2 tbsp Butter, melted and cooled
½ tsp Vanilla extract
½ cup (rounded) coarsely chopped fresh Strawberries

In a small bowl, combine the first four ingredients.
In another bowl, whisk the eggs, yogurt, butter and vanilla.
Stir into the dry ingredients just until moistened. Fold in strawberries.
Fill muffin cups coated with cooking spray or lined with paper liners two-thirds full.

Bake at 375° for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Great idea in halving the recipe. I made all 12 and now I will eat them all!
