Muffin Monday: Sugar Crusted Cranberry Apple Muffins
I have to thank Anuradha for the lovely muffin treats she gives us week after week. I'm enjoying making them and my son even more so as he gets to relish a different taste every week.
My first thought was to make the muffins with Raisins. Then Fig and Honey. Finally I settled to making them with Cranberries.
Cranberry and Apples go well together. So, I added some fresh apples into the batter. It was very delicious.
2 cups all-purpose Flour
3/4 cup Sugar
2 tsp Baking Powder
1/4 tsp Salt
1/2 cup unsalted Butter, melted
3/4 cup Milk
1 large Egg
1/4 tsp Vanilla Essence
1 cup Cranberries (I used dry)
1/2 cup Apple, peeled and chopped fine

Heat oven to 400° F. Line a 12-cup muffin tin with paper liners or coat with cooking spray or butter.
In a medium bowl, combine 1 3/4 cups of the flour, 1/2 cup of the sugar, baking powder, and salt. Add melted and cooled butter and combine.
In a second bowl, whisk together the milk, egg, and vanilla.
Gradually add the milk mixture to the flour mixture and stir until just combined; the batter will be lumpy.
Toss the berries and apple with the remaining flour in a bowl.
Gently fold the berry mixture into the batter.
Fill each muffin cup 3/4 full.
Sprinkle the remaining sugar over the batter.
Bake for 17 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Transfer pan to a wire rack to cool for 10 minutes.
