Vendakkai (Bhindi / Ladies Finger) Rice
When I told Amma what I was going to pack for Ram she said: "Vendakkaya?"
This is just a variation of the Kovakkai Sadham (my sister's recipe) that I have posted earlier. Healthy and tasty with Raitha or just plain curds - Meal in a bowl!
The vegetable alone (before mixing the rice) makes a great side dish. Enjoy it the way you like!!!
Ingredients: (Serves 3 to 4)
Basmathi Rice - 1 cup
Ladies Finger - 400 grams, sliced
Onion - 1, small, chopped
Oil - 2 Tbsp
Ghee - 1 Tbsp
Jeera - 1/4 tsp
Curry Leaves - 1 sprig
Green Chillies - 6, halved and slit
Salt to taste
Turmerric Powder - 1/4 tsp
Dhaniya Powder - 2 Tbsp
Lemon - 1
Corriander leaves to garnish.
Wash Basmathi Rice very well. Cook in plenty of water until cooked but firm. Drain and cool well.
Slice the ladies finger. Here, I have sliced it on the diagonal; but I think straight is better. It will look like stars.
Heat oil and ghee in a kadai. Splutter jeera seeds and then add onions and curry leaves.
Add green chillies and saute. Then toss in the sliced ladies finger and stir fry on high heat for 2 minutes. Lower flame and spread out the vegetable over the base of the pan.
Cook stirring once a minute until half done.
Sprinkle salt, turmerric powder, and dhaniya powder.
Stir fry on high to mix well. Lower flame and cook until done.
Mix in the cooled rice and lemon juice.
Garnish with corriander leaves (I ran out of Corriander!)
Serve hot with Raitha or plain curds.
