'Wheat Slim Rice' Pulav/Pulao
I have a packet of 'Wheat Slim Rice' in my fridge; for quite some time now. Amma is very enterprising and loves to try out new recipes. She too has been postponing trying this new 'grain'. Finally, on my day off, I decided that we are make it for lunch. We planned on making a 'Kichadi' from Tarla Dalal's book, substituting the new grain for Rice.
As you would for Rice, Amma washed and soaked one cup from the box. As she was organising the vegetables, I felt the texture of the new grain and found it sticky. Intrigued I read the instructions from the box. It asked the grain to be cooked first before adding to the cooked vegetables. We added boiling water, and as it was cooking, the fragrance that filled the house was something very familiar - like Pasta.
Yes! it is the 'Rice Pasta'. I have only read about this. This is the first time I got to see this variety of Pasta. We proceeded to make a Pulao instead of Kichadi.
Wheat Rice - 1 cup
Mixed Vegetables - 1 cup (Carrot, Beans, Peas, Potatoes)
Small Onions - 7
Green Chillies - 3, finely chopped
Ginger - Garlic paste - 1/2 tsp
Oil - 1 Tbsp
Butter - 1 tsp
Cardamom - 1
Cloves - 2
Cinnamon - 1 small piece
Bay Leaf - 1
Turmerric Powder - 1/4 tsp
Chilli Powder - 1/4 tsp
Salt to taste
Boil 3 cups of water and add slim rice along with 1 tsp salt and oil.
Cook for about 5 minutes. It should be cooked but firm.
Drain and wash under running water. Keep aside.
Crush the cardamom, cinnamon and cloves lightly.
Heat oil + butter in a pan and fry the crushed spices. Add bay leaf and onions.
Then, add the vegetables, chillies, ginger-garlic, turmerric powder, chilli powder and salt. Saute until well combined.
Sprinkle water and cook covered until vegetables are done.
Add the cooked 'Slim Rice' and mix well.
Serve hot with pickle and Raitha.
