Muffin Monday - Blondie Twix Muffins
Muffins for Breakfast is yum; and with Twix in it - Yummier still!!! This list of ingredients was all that I needed to get into the kitchen for some MUFFINS. These muffins were out of the world and disappeared real fast.
I assumed that the butter had to be melted and did so. I wanted to see the Twix after the muffin was baked, and (I was lazy to shop for Cocoa Powder - the things that disappear from my kitchen!) so I opted to make a 'Blondie' Muffin - Hence, the additional 3 Tablespoons of flour.
Many a times it would be a rushed entry for this wonderful event - Muffin Monday at Baker Street! Sometimes, so late that I would not post it / post very late indeed.

Ingredients: (makes 10 to 12 muffins)
140 grams Twix (2 'twin' bars)
250 grams + 3 Tbsp Plain Flour
2 tsp Baking powder
½ tsp Bicarbonate of soda
120 grams Sugar
110 grams Butter, melted and cooled
240 ml Milk
1/2 tsp Vanilla Essence
Preheat oven to 190 ° C.
Chop Twix fingers into bite sized pieces.
Mix flour, baking powder, baking soda, and Twix in a bowl.
In another bowl, beat eggs, sugar, milk, essence and butter until fluffy (I used a hand blender this time).
Add flour mixture and stir.
Spoon batter into greased (optional) muffin cups.
Bake for about 20 - 25 minutes, until a toothpick inserted in the centre of a muffin comes out clean.
