# Baking Eggless - Biscotti with Apricot & Pistachio

Baking Eggless is quite a challenge and baking a Biscotti for the first time has been quite an experience. Gayathri chose a wonderful Apricot Pistachio Biscotti recipe from Baking Obsession, that had Orange flower water in it. I wanted to substitute it with Rose water or Kewara Water. But was skeptical as this is a first for me. I made half the recipe. The biscotti cracked for me as well, but I will try one more time and update this post with a better picture. Saw many beautiful ones by the other members of this wonderful group.

Granulated Sugar - 1/2 cup
Butter - 4 Tbsp (1/4 cup)
Flour - 1 cup
Baking Powder - 1/2 tsp + 1/8 tsp
Salt - 1/4 tsp
Orange Zest - 1 Tbsp
Vanilla Essence - 1/2 tsp
Orange Essence - 1/2 tsp
Cornflour - 1 Tbsp
Water - 2 Tbsp
Apricots - 1/3 cup
Pistachio - 1/3 cup

Pre-heat the oven to 180 degrees.
Sieve the flour with baking powder and salt.
Cream butter and sugar together.
Mix cornflour with water and keep aside.
Add orange zest, and the essences. Cream well. Add cornflour mixture and mix well.
Add in the flour and gather the dough.
Shape into a log and place on a greased tray.
Bake for 25 - 30 minutes until firm to touch.
Cool on a rack for about 10 minutes and then slice carefully.
Place in the oven (150 degrees) and bake until dry. Cool completely before storing in airtight tins.

It has taken a long time in my oven. Would like feedback if it is the same with every one?

Biscotti has turned out nice Minu. The eggless recipe cracks a lot. So don't worry because we are all in the same boat. But the end result is great...
