Beetroot Rava Ladoo

Deepavali - The day begins with an early morning oil bath, wearing new clothes, bursting of crackers, and visiting temples. It is customary to share Diwali / Deepavali 'Palagaram's' with your neighbours. These are the tradition of the day. 
Sweets and Savory are made and offered to God before sharing with neighbours and loved ones. The assorted treats from each home would delight us. Even as they are available throughout the year nowadays, I feel that what you make for festivals taste divine.
Beetroot - I love this vegetable and do use it quite often at home. I saw a combination of two of my favourites @ Ayesha's blog way back and did decide to try. It got shelved for various reasons and I had forgotten about it till I came across the same in Shireen's blog. This time I decided to try it immediately.
The first time I tried, I found that I had not roasted the Rava well. The next time, it was just right. A quick and instant treat with beets for Diwali.

Ingredients:
Beetroot - 1 cup, grated
Rava - 1 cup
Sugar - 1/3 cup
Coconut, grated - 2 Tbsp
Ghee - 3 Tbsp
Cashew nuts - 2 Tbsp
Milk - 2 Tbsp
Elaichi Powder - 1/4 tsp


Instructions:
Heat 1 Tbsp ghee in a kadai and fry the cashew nuts. Drain and keep aside.
In the same pan, fry the grated coconut in the remaining ghee. Remove to a plate.
Add 1 Tbsp ghee into the pan and fry the grated beetroot until dry. Remove to the plate.
Pour 1 Tbsp ghee into the kadai and roast the rava very well.
Mix in the roasted nuts, coconut and beetroot along with sugar and elaichi.
Mix well. Add milk a little at a time. Mix and gather to see if it forms a ball. If you are able to make a ball stop adding any more milk.
Cool the mixture for about 10 minutes and then form into 10 to 12 even sized balls.
Allow to dry out in a plate.
Stays fresh for 3 to 4 days in an airtight container.
