Kariveppilai Thovayal

Thovayal / Thuvayal is an integral part of the Chettinad Cuisine. While side dishes like Sambhar, Kurma, etc were made especially for entertaining guests; everyday fare would be "Thovyal" to go with our staples, ground without much water in an 'Ammi Kal'. Milagai Thovayal is the famous one associated with our cuisine. There are other less familiar ones; some use coconut while others do not. All herbs (corriander leaves, curry leaves and mint leaves) can be used in combination or individually in this recipe. Here, Amma has used onions and tomatoes to increase the quantity of the Thovayal. Again, this is optional.
Kariveppilai Thuvayal made as mentioned here without coconut is strong and pungent, hence portion per person is much smaller.

Ingredients:
Oil - 1 Tbsp
Urad Dal - 2 Tbsp
Dry Red Chillies - 2
Green Chillies - 2
Ginger - 1/2", chopped
Garlic - 1 flake
Tamarind - 1/2" piece
Onion - 1
Tomato - 1 
Curry Leaves - 1 fistful of leaves
Salt to taste

Instructions:
Heat oil and add the urad dal first. When it changes colour, add onions and saute.
Add chillies, garlic, ginger and tamarind.
Stir fry over a medium flame. 
Then add tomatoes and saute until it has wilted a little.
Add curry leaves and fry until glossy all over.
Cool slightly and grind, adding salt to taste; using very little water to a thick and smooth paste.
