Potato - Peanut Chaat

What do you do after you buy a cook book? I drool over the pictures, check out those recipes first; then look for some favourites - name-wise or ingredient-wise. Decide which one to make first, make sure the ingredients are at home, and finally get it done. First part over. The next is to capture a picture to convey all that you have loved about the dish. If it gets done immediately, it does not seem a tall order. If there is a delay; then its a different story. I am sure you will all agree with me.
Like-wise with events. I get so carried away by the recipes posted that a delay happens and sometimes the challenge remains a challenge. Ideas abound when a challenge is announced. With great ideas and the perfect recipe in mind I often fail to do the simple ones. I do not want MM#11 to fly by too. With wonderful day to day ingredients the possibilities are endless.
Another one adapted from Tarla Dalal. Enjoy this simple Chaat and team it with a glass of Sweet Lassi!

Potato - 3, large
Peanuts (roasted) - 1/4 cup
Oil - 2 Tbsp
Chilli Powder - 3/4 tsp
Jeera Powder - 1 tsp
Chaat Masala - 1 tsp
Sugar - 1/4 tsp
Aamchur Powder - 1/4 tsp
Salt - 1/2 tsp
Corriander Leaves - 1 Tbsp, chopped fine

Wash and scrub the potatoes very well. Pressure cook for 1 whistle.
Cool and cube with the skin.
Take the masala ingredients in a bowl and mix well.
Heat oil in a non-stick pan and add potato cubes. Stir fry until browned and crisp.
Add in peanuts and saute for a minute.
Add masala mix and toss to coat evenly.
Garnish with corriander leaves and serve at once.

Never tried this combination in a chaat. nice recipe, the amchoor gives the perfect kick!
