Pumpkin & Potatoes - Side dish for Puri

Kizhangu (Aloo Bhaji) is always a favourite at home as an accompaniment to Poori's. I also love the Aloo sabji served at railway stations up North. Yum. There are a couple of new favourites to compete with the ubiquitous Kizhangu. Here is one winner of a recipe from Tarla Dalal that has found its way into our hearts. I would say that it was the picture in the book that tipped the scale in its favour. My mouth waters just looking at the picture. That is how much I love this sabji (side dish). It has been a while since I made this; and is an answer to the question I had asked on my fb page.
As with most recipes the list of ingredients is way too long; but this is a simple and easy recipe.

Pumpkin - 1/2 Kg
Potatoes - 1/2 Kg
Tomato - 1, chop
Oil - 3 Tbsp
Bay Leaf - 1
Cardamom - 2
Cloves - 2
Cinnamon - 1 small piece
Kalnoji (Nigella Seeds) - 1 tsp
Mustard - 1/2 tsp
Fenugreek seeds - 1/2 tsp
Chilli Powder - 1 tsp
Turmerric Powder - 1/2 tsp
Dhania Powder - 1.5 tsp
Jeera Powder - - 1/2 tsp
Asafoetida Powder - 1/4 tsp
Curds - 2 Tbsp
Water - 1/2 cup
Aamchur - 1 tsp
Sugar - 1/2 tsp
Salt to taste

Take bay leaf, cardamom, cloves, cinnamon, nigella seeds, mustard and fenugreek seeds in a cup.
In another cup take curds, asafoetida, chilli powder, turmerric powder, dhania powder, jeera powder and mix well.
Heat oil (Butter) and splutter the seasoning seeds. Then add the curd masala mixture and tomatoes and fry for 1 minute.
Add potato and saute. Then tip in the pumpkins and stir fry on high for 1 minute. Add about 1 tsp salt.
Lower flame and add water. Cook covered until the vegetables are soft and has absorbed the masala.
Now add salt to taste, aamchur powder and sugar. Mix till well blended.
Serve Hot with Puri / Poori.
