# Baking Eggless - Hershey's "Perfectly Chocolate" Chocolate Cake

Wishing the "Baking Eggless" Group all the success in the years to come. Gayathri has completed one year of challenges and is stepping into the second with a wonderful and easy Chocolate Cake to celebrate.
I have to thank Gayatri (Gaju's Kitchen) for sharing this recipe with the Baking Eggless group. A Simple, Easy and Perfect Chocolatey Cake. Trust me, you will find it very hard to find another one like this. I made this after we had dinner; and it was quite a task to save it, being extra soft and flavourful. I substituted eggs with curds. The recipe called for two 9" tins. So I halved the recipe, and baked as cup cakes.
Maida - 3/4 cup + 2 tablespoon
Baking Powder - 3/4 teaspoon
Cooking Soda - 3/4 teaspoon
Salt - 1/2 teaspoon
Cocoa Powder - 1/4 cup + 2 tablespoon
Sugar - 1 cup
Milk - 1/2 cup
Oil - 1/4 cup
Curds - 1/4 cup, beaten (or 1 egg)
Vanilla Essence - 1 teaspoon
Boiling Hot Water - 1/2 cup

Pre-heat oven to 180* C. Grease and flour a 9" pan.
Sift maida with baking powder, salt, soda and cocoa powder.
Take the dry ingredients in a bowl. Mix until combined.
Make a well in the centre and pour in all the wet ingredients except water. Beat on medium speed for 2 minutes.
Mix in the boiling hot water. (Batter will be watery.)
Pour into prepared pan and bake for 25 to 30 minutes.
Cool in pan for 10 minutes. Then remove from pan and cool well on a wire rack.
Frost the cake with "Perfectly Chocolate" Chocolate Frosting when completely cool.

"Perfectly Chocolate" Chocolate Frosting

Butter - 1/4 cup
Cocoa Powder - 1/3 cup
Powdered Sugar - 1.5 cups
Milk - 1/6 cup
Vanilla Essence - 1/2 teaspoon

Melt butter. Stir in cocoa.
Alternatelt add powdered sugar and milk. Whisk to a spreading consistency.
Stir in Vanilla. Add a little extra milk if needed.
