Spinach & Lemon Soup
I tried two substitutions for the Meatballs. One was making tiny Vada. I had some Urad Dal batter that I made into tiny balls and deep fried - protein rich and I thought it was the perfect substitute. The other was Paneer. This herbed Paneer in the Fridge was cubed and pan-fried with salt an pepper. Both were absolutely delicious.
Tur Dal - 1/4 cup
Olive Oil - 1 tablespoon
Onion - 1, chopped fine
Turmerric Powder - 1/4 tsp
Water / Stock - 1.5 Litres
Rice Flour - 2 Tbsp
Palak - 2 cups, chopped fine
Lemon - 2
Salt & Pepper to taste
Mint - 1 tablespoon, minced
Garlic - 1 flake, minced
Mint and stir fried Paneer
Soak the Tur Dal in 2 cups of water for half an hour. Drain.
Mix the rice flour in a little water and keep aside.
Boil the remaining stock / water.
Heat 2 teaspoon oil in a heavy bottomed pan. Add onions and saute.
When the onions turn pink, add soaked dal and stir fry for a minute.
Add the turmerric powder and stock / water; and simmer until dal is soft.
Add rice flour paste, lemon juice, salt and pepper. Simmer for 3 minutes.
Add the chopped palak, and simmer further.
Take another small pan and heat the remaining 1 teaspoon oil.
Saute the chopped mint and garlic until fragrant. Add it to the soup.
Serve hot garnished with fresh mint and sauteed paneer.
Instead of Paneer you can add tiny Vada / Bonda.
