Whole Wheat Pizza with Panner Tikka

Pizza - I love making them at home. It is very satisfying and this way we also have a say in what goes in. For this months Home Bakers challenge, we were given a choice of 4 tempting Pizzas by Divya - with Tomato Sauce, without Tomato sauce, with Pesto and finally one with an Indian touch - the Naanizza! 

I chose to make mine with a whole wheat base and decided to top it with Paneer Tikka and Broccoli. Thank you Priya and Divya!!! A great choice and variety.
Ingredients:
For the Base:
Whole Wheat Flour - 2 cups
Warm Water - 1/2 cup
Active dry Yeast - 2+1/4 teaspoons
Sugar - 1/2 teaspoon
Salt - 1/2 teaspoon
Oil - 3 tablespoons

For the Topping:
Tomato Sauce - 6 tablespoons
Broccoli - 1/2 cup, blanched
Cheese - 1/4 cup
Mix together for Paneer Tikka
Paneer - 100 grams, cubed
Chilli Powder - 1/2 teaspoon
Salt to taste
Pepper - 1/4 teaspoon
Jeera Powder - 1/2 teaspoon
Garam Masala - 1/4 teaspoon
Curd - 2 teaspoon
Lemon Juice - a few drops

Instructions:
For the Base:
Dissolve sugar in the warm water and add in the yeast. Keep covered for a few minutes until it dissolves.
Take the Whole Wheat flour and salt in a bowl. Make a well in the centre and add in the yeast with water and oil. Mix together and knead to a smooth dough.
Place dough on a clean surface and knead for a few minutes.
Place the dough in an oiled bowl. Cover with plastic and keep aside to prove in a warm place.
Punch down the dough lightly and fold the dough back into itself 4 or 5 times, incorporating air and keep covered for a second rise. (At this stage - before the second rise, refrigerate the dough if you are not making it the same day. It will stay for a day or two. Bring it to room temperature and proceed to bake the Pizza.)
Gently punch the dough, and knead it a few times. Divide into 2. Keep one covered in a bowl.

Bake the Pizza:
Roll out the dough to fit your pan.
Sprinkle cornmeal generously on the pizza peel and transfer the rolled out dough on it.
Prick with a fork all over and bake in a hot oven (200ºC) for ten minutes.
Remove onto a wire rack and spread with tomato sauce and top with cheese and toppings of your choice. Grate some more cheese on top and drizzle a tablespoon of olive oil all over.
Bake at 200ºC until the cheese has melted and the Pizza is crisp and brown.
Slice after 10 minutes.
