#OPOS Pappad Pickle Pulao
The convenience and comfort of a meal in a bowl is totally unparalleled. Be it Curd Rice, Lemon Rice, Bisi Bele or Pulao - a one pot meal is always welcome at home. Rasam Sadham was a tangy addition to the list of quick favourites. Here's another one to awaken your taste buds - made with pickle.
The proof of the pudding is in the tasting. This is one awesome recipe that will pull your taste buds. It is versatile and a number of variations are possible. The variations lie in the variety of pickle used to mix in. Try it with Avakkai and cooked Kabuli Channa. Or Gongura and Shallots. Or with just mixed veg pickle. Yes. It's as simple as that.
Today's special is with Tomato Thokku. I love the pappads added to Vathakozhambu. Here too it lends a different texture and protein. Seasoning and garnish is optional.
We can also vary the grain. We can use millet grains or quinoa instead of rice. The cooking time will vary accordingly.
Please follow the recipe VERBATIM the first time before trying other combinations.
Pickle - 3 tablespoons
Pappad - 1 large, broken into bits
Basmati Rice - 1/2 cup
Soak rice in hot water for 30 minutes.
Take broken Pappad and pickle in a 2 litre pressure cooker. The reason my cooker is messy is because I had just made the Tomato Thokku. Making the Pulao in the same Cooker. ;)
Add in soaked rice and water. Close cooker and pressure cook on medium flame for 4 whistles.
Allow pressure to subside. Open and add seasoning/garnish.
Serve Hot Pulao with Raitha / Curds.
