Aachari Gobi - OPOS style

Cooking is a breeze with OPOS techniques. Once learnt, as Rama Krishnan says "a recipe is a series of ingredients, layered and cooked".

Using a 2 litre pressure cooker - add the following in layers...
1 tsp Oil + 1 tsp Water
1/4 tsp each mustard, jeera, sombhu, crushed dhania, and 1 pinch of fenugreek seeds, and onion seeds
1/2 onion, chopped
Veggies:- My version has cauliflower, tomato, sweet potato, and capsicum - cut into chunks; mixed with 1 teaspoon each of water and oil, along with 2 teaspoon curd, chilli powder, ginger, turmerric powder and salt.
Place this mixture above onions.
Sprinkle corriander leaves, kasuri methi and 1 more teaspoon water
Pressure cook on high for 2 whistles. Release steam and enjoy.
